Join the culinary team behind Moody Tongue Sushi at Hilton West Palm Beach—an intimate, Michelin-recognized omakase experience pairing precise technique with warm hospitality.

Why you’ll love this role

  • Hands-on training in sushi fundamentals: precise knife work, fish butchery, rice, nigiri/maki, and omakase pacing.

What you’ll do

  • Execute prep and service to exact recipes and standards; maintain immaculate mise and station organization.
  • Fabricate seafood and produce with careful yield control; cook rice and season components with consistency.
  • Plate and pass courses to the chef’s timing for a 24-seat omakase.
  • Uphold food safety/SOPs (temperature logs, labeling/day dots, sanitation) and assist with daily close.

What you bring

  • 1+ year line or sushi bar experience (omakase or Japanese cuisine a plus, but we’ll train the right talent).
  • Strong knife skills, attention to detail, and calm, professional presence in a tight service window.
  • Reliability, teamwork, and pride in delivering a premium guest experience.

  • Status: Part-time; evenings; schedule based on business levels.
  • Location: Hilton West Palm Beach – Moody Tongue Sushi.
  • Food Handler certification (or ability to obtain) required.
